The Value project explores strategies for improving farm incomes through specialty farm products and value-added processing. The College of Agricultural, Consumer, and Environmental Sciences (ACES) at the water quality. This University of Illinois developed this research project in collaboration with the Illinois Institute for Rural Affairs at Western Illinois University. The research team carries out studies on specialty crop and livestock marketing, specialty crop technology including on-farm trials, and strategic planning to assess the economic potential of different specialty farm products in different parts of the state.
The primary goal is to help farmers increase their income by producing, marketing, and/or processing different types of specialty farm products. A second goal is to help farmers organize into producer alliances to capture more value from these specialty farm products.
The Illinois Council on Food and Agricultural Research is funding this project as part of its Special Research Initiative on Rural Community Development.
